London born Alex Dilling discovered his fond admiration for food from a young age. Discovering various techniques and products throughout travel, Alex developed a curious and passionate palate from devouring the comforts of European cuisine.
His culinary journey began under the legacy of Alain Ducasse at Adour in New York. Mentored and guided by the esteemed Didier Elena and Tony Esnault, Alex and his team attained two Michelin stars in early 2012. Progressing through to the crown jewel of caviar restaurants, Caviar Russe, Alex founded his love for caviar of which remains to this day to be one of his most celebrated ingredients.
After returning to to the UK, Alex joined Helene Darroze and closely alongside Helene, led the culinary team as Executive Corporate Chef, assisting in the operational maintenance of the elite two Michelin stars between London and Paris. Alex continued to inspire and elevate the food scene in London with his curations at The Greenhouse, attracting an international crowd, who travelled the world to experience and endeavour the wonders of his luxurious menus.
About Alex Dilling at Hotel Cafe Royal
Alex's first standalone restaurant opens at Hotel Cafe Royal on 1st September 2022. The restaurant will see Alex deliver the finest ingredients taking inspiration from French classics.
The restaurant is situated on the first floor of the hotel overlooking the buzz of Regent Street within the setting of an elegant dining room.
We advise a smart casual dress code for the dining room, sportswear and loungewear are not permitted
All allergies should be notified to the restaurant no later than 72 hours prior to the reservation, any last-minute allergies shall try to be accommodated however cannot be guaranteed. Regretfully, we are unable to cater a vegan menu.
At the discretion of all of our guests, we welcome guests aged seven and above in the dining room
Please call the restaurant within 72 hours of your reservation should you wish to cancel. Reservations cancelled 48-72 hours prior to due reservations will incur a £75pp charge and less than 48 hours will incur a £195pp charge.
We are an intimate and high demand restaurant which is reflected with our cancellation policy.
